The grapes are picked manually per micro-parcel at perfect maturity.
They are vinified naturally in order to produce wines that come from a place. In vinification, we do not use any input that could modify the taste of each terroir, besides minimal doses of SO2.
Winemaking techniques :
- Slow pneumatic pressing at very low pressure of hand-picked whole grapes.
- Separation of the press batches per micro-parcel: the first press is vinified in stainless steel tanks and the press core is vinified in oak barrels that had up to 10 wines.
- Racking by gravity in oak barrels and casks for alcoholic fermentation
- Strong emphasized settling: the vinified juice is very clear and very low in nutrients for the yeasts.
- Fermentation at very low temperature
- All these pre-fermentation operations are intended to slow down the work of the yeasts and carry out very long alcoholic fermentations. They last from 3 to 9 months, whereas a classic fermentation lasts between 15 days and 3 weeks.
- Objective: to encourage the development of numerous yeast strains, resulting from biodiversity, to increase aromatic complexity.
- Very light filtration before bottling.
- Natural cork, untreated, selected after tasting the batches.

As from 2021 we are officially AB-labelled for organic agriculture.
The vines are entirely ploughed and we only use copper and sulphur, natural molecules, to protect them from mildew and oidium, the two main parasitic fungi of the vine.
The history of the Château de Messey estate begins with the acquisition of a 7ha85 wood in the village of Cruzille by Marc Dumont. This terroir, planted and operated by the monks of Cluny in the 12th century is classified as a Mâcon-Cruzille appellation. The planting of this fairly high-altitude vineyard (« clos ») began in 1989.
